The Peranzana monocultivar extra-virgin olive oil has a delicate flavour, while widely drawing from vegetable tastes. The aftertaste strongly reminds of artichokes, chicory and field lettuce. A well expressed and well balanced bitter and spicy taste, with an almond closing flavour that balances the entire experience.

History of the producer

The land acquired over time by the Passalacqua family, at the foot of the Gargano National Park, in Apulia enjoys climatic conditions that are absolutely ideal for the vegetables and fruit grown in our fields. BioOrto has mastered the art of promoting a simple country product and, using technology, bring it to all the markets. From planting to the final product, all stages of sowing, picking exclusively by hand, packaging and marketing are controlled by a company with a cottage industry approach but able to operate on a large scale. The deliberate choice of organic agriculture has been reinforced over time by an extreme attention to cultivation, from the field to the table, of fresh produce and olive oil and tomatoes for preservation in jars. Current product certification and procedures, which enhance employees' wellbeing, are a sign of Bioorto's commitment, which is evaluated by continuous direct checks and by our customers.

Organoleptic Requirements
Colour: deep golden yellow with delicate green shades.
Olfactory evaluation: fruity aromas of unripe tomato with aromatic notes of officinal herbs, basil and parsley above all.
Taste evaluation: delicate, with a wide vegetable influence and hints of artichoke, chicory and field lettuce. A well expressed and well balanced bitter and spicy taste, with an almond closing flavour.

Serving Suggestions: Best combined with spelt-based appetizers, salmon carpaccio, chicken salads, marinated vegetables, barley soups, risotto with shellfish, shellfish soup, roasted fish, baked rabbit, grilled poultry, fresh spun curd cheeses.
